Jack Bird, the maestro behind the culinary creations, draws inspiration from Peru’s vibrant ingredients and innovative cooking techniques to craft an extraordinary menu that captures the heart of Peruvian gastronomy.

The dining experience at the Sanctuary Restaurant transcends the ordinary, offering a fine-dining escapade complete with full table service. Executive Chef Jack Bird, Broken Hill born and proud South Australian, brings a wealth of experience to the table. Helming Blanco Horner Catering, his culinary journey includes a stint with Shane Delia of Maha Restaurant fame, exploring Middle Eastern cuisine, and four years at the acclaimed Restaurant Botanic, where he cultivated a deep appreciation for local and garden produce under the guidance of Paul Baker and Justin James.

Bird’s culinary prowess has been honed through five years of international exposure, working in kitchens across the U.S. and Southeast Asia. His commitment to sourcing locally, ethically raised, and sustainable produce reflects a dedication to quality that defines his career.

With bookings starting at $79 per person, this delectable experience is not only a feast for the senses but also an opportunity to appreciate the intricate tapestry of flavors from South America and the Caribbean.
