Adelaide’s food credentials are about to strengthen considerably, with five new traders announced for the Adelaide Central Market as part of the landmark $600 million Market Square development.
Among them is Ginza Kagari, the Michelin Guide-listed ramen restaurant from Tokyo that has built a devoted following for its signature broth. Having opened their first Australian location in Melbourne earlier this year, the team will import their broth directly from Japan to ensure Adelaide diners experience the same depth of flavour.
“Bringing Ginza Kagari to Adelaide is an exciting next chapter for us,” says William Foo from Ginza Kagari. “Adelaide Central Market’s strong connection to food, culture and community makes it a natural home for the brand.”
Melbourne coffee institution Jasper Coffee is also making the move west after more than 35 years roasting in Victoria. Founder Jasper Parker Trenfield says the Market’s national reputation made it an obvious fit.
“Adelaide is a remarkable place, with a thriving food scene, a strong creative spirit and a relaxed atmosphere that draws you in immediately,” he says. “We can’t wait to start pulling shots alongside traders who care deeply about what they do.”
The new traders
The five newly announced additions are:
- Ginza Kagari – Michelin Guide-listed ramen restaurant from Tokyo, bringing their signature broth and noodles imported directly from Japan
- Jasper Coffee – Award-winning Melbourne coffee roaster with more than 35 years of experience
- Napolitano Pastificio Italiano – Authentic fresh pasta house offering pastas, sauces and carefully selected Italian ingredients
- Project Burrata – Handmade burrata with a soft mozzarella shell filled with creamy stracciatella, returning after a successful stint in the Market’s Producer in Residence Program in 2025
- Sofra Kebab House – Traditional Iraqi-Turkish yiros, gozleme and baklava
They join a growing lineup that includes South Australian names Never Never Distilling Co, Shapeshifter Brewing, O’Sushi O’Bento and Red Cacao, all part of the expansion.
The bigger picture
Adelaide Central Market General Manager Fabienne Reilly says the strong interest from both South Australian and interstate brands reflects the Market’s standing as a national food icon.
“It is an exciting time for the Market as we prepare to welcome more than 50 new traders to our community,” Ms Reilly says. “The strong level of interest we’ve seen is a testament to our reputation and to the community we’ve built over the past 150 years.”
The Market expansion anchors the $600 million Market Square Development, which will transform the former Central Market Arcade into one of Adelaide’s most significant mixed-use destinations. The development includes a Level 1 retail offering, Australia’s first Treehouse Hotel, 234 residential apartments and a nine-storey office tower.
In 2026, the Market will double in size as part of what’s being called a once-in-a-generation expansion.
