The new menu is a medley of comforting dishes, inspired by the best of Italian ingredients and local produce. Warm up with a Winter beef ragu on iTL’s signature house-made pasta, or melt-in-your-mouth mains like the rump tagliata served with pickled king oyster mushrooms and a charred wild mushroom mix.
iTL Head Chef, Mario Vargiu, said the paccheri with roasted tomatoes sauce is a stand-out dish: “It reflects the simplicity of a few key Italian ingredients; 3 different type of tomatoes which are gently cooked, chilled and re cooked, then passed through a sieve to obtain a beautiful, fresh and flavoursome sauce finished with butter, parmesan and basil. Simple but delicious.”
