Ferguson Australia shares with FIFTY+SA their Southern Garfish tostadas with fresh guacamole and smoky mayonnaise recipe. The perfect addition for your next get-together.

RECIPE: Anjelica Alanne

  • 1 packet Ferguson Southern Garfish fillets, thawed in the refrigerator overnight
  • 2 teaspoons cooking oil
  • Salt and pepper
  • 2 tablespoons mayonnaise
  • 1 teaspoon smoked paprika
  • 2 large avocadoes
  • 1 tablespoon diced red onion
  • Juice of 1 lime
  • Small handful coriander, chopped
  • 20 salted corn chips
  • 1 Lebanese cucumber, diced

Preheat a large frypan over high heat. Add the oil and garfish, and sprinkle with salt and pepper. Cook for 1 minute on each side, before removing from the pan. Allow to cool before flaking the garfish into large chunks.

In a small bowl, mix the mayonnaise and smoked paprika.

In another bowl, add the flesh of the avocado, red onion, lime juice, coriander and a pinch of salt and pepper. Roughly mash to combine.

Lay the corn chips on a serving plate. To serve, top with guacamole, cucumber, garfish and smoky mayonnaise.
