Founded by Daniel Ida and Mickey Capurso, Señor Taco has built a loyal following in Adelaide through its food truck, known for delivering bold, authentic flavours. Now, they’re taking the next step—joining one of Australia’s most iconic food destinations with a three-week residency that showcases their evolution from street food to small-batch artisan producer.
From Mexican streets to the market
Señor Taco’s story begins with a passion for real Mexican cuisine, born from three back-to-back trips to Mexico starting in 2017.
“We were captivated by the fresh flavours and vivid colours of Mexican cuisine, and we realised there was a huge gap in the Australian market for authentic Mexican food,” says co-owner Daniel Ida.

Their latest creation, inspired by a five-week research trip to Mexico earlier this year, features a crumbed and fried fillet of Coorong mullet, served with house-made pickled cabbage and chipotle sauce on a soft tortilla.
“The flavours marry together so well,” says Daniel. “We also felt inspired to show some extra support to local SA fisherman, who have had a tough year.”
This unique take on the classic fish taco reflects Señor Taco’s focus on using fresh, local ingredients while remaining true to Mexican street food traditions.
Salsa with soul
During their time at the Market, Señor Taco will also feature their handcrafted Señor Salsa range—made in small batches with traditional recipes. Each variety is preservative-free, gluten-free, and vegan, catering to modern dietary preferences without compromising on taste. Their Mango Salsa, already a customer favourite, is the perfect match for their popular chicken taco.
