Everyone is welcome at Barro

A Michelin-starred chef, a sommelier and Australia's Bartender of the Year have brought Mexico City's new-wave dining energy to Adelaide.

Adelaide’s dining scene has a new addition! Barro, a contemporary Mexican restaurant on Rosina Street in the CBD, brings together three hospitality talents with serious credentials and a shared vision: to show Adelaide there’s more to Mexican food than traditional fare.

The team behind Barro all grew up in Mexico and bring experience from some of the world’s most celebrated kitchens. Alejandro Huerta, who co-owns the restaurant with his wife Galia Valadez, is a Michelin-starred chef whose résumé includes Copenhagen’s Noma and Chicago’s Alinea. Galia, a pastry chef turned sommelier, worked at the famed Lillas Pastia. Their business partner Eduardo Conde is the 2023 Diageo Bartender of the Year and Boothby’s 2025 Bartender of the Year.

The three met at No.92 in Glebe, Sydney. Alejandro went on to lead some of Sydney’s best Mexican restaurants including El Primo Sanchez, Lottie and Comedor. Galia became head chef at No.92, while Eduardo made his name at the Maybe Group. Now they’ve brought their collective expertise to Adelaide.

A taste of Mexico City in Adelaide

“Barro reflects the new culinary energy of Mexico City with a slice of old school hospitality,” says Alejandro. “The space and atmosphere are fun, welcoming, and lively and so are the food and drink; some of the dishes might challenge you but that’s all part of the adventure. We couldn’t be more happy with how Adelaide has welcomed us.”

The restaurant has made an immediate impression with dishes such as compressed pig’s head tacos, mole coloradito (inspired by Alejandro’s great grandmother’s recipe) and Murray cod ‘zarandeado’. Behind the bar, Eduardo reimagines classic Mexican cocktails with traditional Mexican spirits.

Galia’s wine list champions light-touch South Australian winemakers including Gentle Folk, Ngeringa, Gullyview Estate, and Ministry of Clouds.

A room that feels like home

Working with local design studio Faculty, Alejandro and Galia have filled the space with pieces brought from Mexico: family heirlooms, art, and recipes passed down through generations. The result is a small room with a big heart and Mexican soul, closer to the buzzing energy of a new-wave CDMX restaurant than a traditional cantina.

Together, Alejandro and Galia are building a reputation as one of Adelaide’s most exciting hospitality partnerships, deeply invested in both the city’s dining scene and its Mexican expat community.
