Two of South Australia’s most cherished names have come together for a collaboration that feels both inevitable and utterly fresh. Haigh’s Chocolates and couture house Paolo Sebastian have unveiled a limited-edition gift range that brings their shared devotion to craftsmanship and storytelling into beautiful focus.
The collection draws on the heritage symbols of both houses: the cocoa bean and flower for Haigh’s, and the nightingale songbird for Paolo Sebastian. The result is a range of gifts in soft pink, powder blue and deep navy, finished with gold accents and the kind of intricate detail both brands are known for.
A shared language of craft
Haigh’s Head Chocolatier Ben Kolly and Paolo Sebastian Creative Director and Founder Paul Vasileff worked closely to develop the range, drawing on personal memories and a mutual respect for hand-crafted excellence.
“Growing up, Haigh’s was a special piece of my childhood. I recall receiving a box of beautifully assorted chocolates and how much it lit me up. As I became older, gifting Haigh’s to others became just as special,” said Paul. “The opportunity to collaborate is such an honour.”
Ben was equally inspired by the partnership. “I was deeply inspired by Paul’s stories and childhood memories of Haigh’s while developing the new and limited-edition chocolates for the Gift Range. We can’t wait for our customers to try them and experience this whimsical collection of gifts for themselves.”
Limited-edition chocolates
The range introduces several new creations crafted by Ben, featuring hazelnut, rose and floral flavours:
White Strawberry & Basil Parfait Truffle pairs strawberry-flavoured truffle with a basil-infused cream centre.
White Lemon Myrtle & Macadamia Block combines creamy white chocolate infused with native lemon myrtle oil and blended with Australian macadamia pieces.
Milk Rose Marshmallow layers fragrant rose-infused marshmallow over spiced dark chocolate ganache.
The popular Milk Turkish Delight Pastilles also feature in an embossed gift tin.
Beyond the chocolates
The collection extends to keepsakes designed to be treasured long after the chocolates are gone. A Paolo Sebastian designed apron comes with a cherished family recipe from Paul’s Nonna, while a bespoke teacup and saucer set arrives paired with classic Haigh’s chocolates.
Part proceeds from every Haigh’s Chocolates x Paolo Sebastian product will support Bowel Cancer Australia and their work with those impacted by bowel cancer.
The Haigh’s Chocolates x Paolo Sebastian Gift Range will be available in Haigh’s stores in Adelaide, Melbourne, Sydney, Brisbane, Canberra and online from 22 September 2026.
